Origin of our fudge

Much alike the definition of the word fudge our business came about in a bit of an underhand manner. Whilst hanging out in October of 2019 we stumbled across a YouTube video of old fashioned fudge being made we were inspired. A promise that one day we would do that.

We kept to that promise and during lockdown, with little else to do, we began practicing and perfecting our unique approach to fudge making. Our skillset improved and our flavour list expanded and people started wanting to buy it.

Interruptions occurred (a university education for one, and years experience in fine-dining restaurants for the other) meaning we could not commit to fudge full time but now, distraction free we present Fudge Business in all its glory.

Science

Fudge is a combination of sugars and milk proteins (cream). The magic behind fudge lies in the controlled heating and cooling of the sugar and cream solution. By heating the sugar and cream together more sugar can be dissolved in the cream than could occur at room temperature. This is called supersaturation. Typically the supersaturated solution is then carefully cooled and then beaten (creamed) till it sets. The process of creaming encourages the formation of small, evenly distributed sugar crystals, this is what gives fudge a smooth texture. We have adopted a slightly different method but it still follows the same principles of controlling sugar crystallisation.

History

Fudge, the beloved treat, is thought to have been born by accident in the late 19th century. Legend has it that a batch of caramels went wrong — or "fudged" — leading to the creation of the confectionary we know today. The first documented mention of fudge came in 1886, when Emelyn Hartridge, a student, made fudge for a senior auction. This marked one of the first times fudge was made and sold in a collegiate setting, helping spread its popularity.

By the turn of the 20th century, fudge had traveled beyond the U.S. and into the world, becoming a favourite treat with endless variations.

Now in the 21st century Fudge Business is here and aims to alter perceptions of fudge forever.
